Is it possible to leave the OpenVPN server on IPFire turned off, and then port forward the OpenVPN traffic through to a server on the LAN? I know that this is not possible using IPSec, but before I just go and try, I figured I would ask.

Yes, I had used in the past a separate machine for OpenVPN (another IPFire box).

It is possible, even with IPsec. IPsec only gets problematic when you are using it on IPFire and on a host behind it because it uses static ports.
